Edamame Beans and Burrata Salad with Walnut Pesto

 

- If you can't find edamame beans, green peas are great substitute. 

- For lighter version, instead of burrata cheese you can you use light soft ricotta, anthotiro or the twarog cheese. 

- Pesto recipe makes about 2 cups, store in the fridge for up to 2 weeks. Use in the pasta dishes and on the bruschetta.
